Enzymes are catalysers of biochemical reactions occurring in living organisms. They have great catalytic ability (they accelerate reactions), much more bigger than the best chemical catalysers. Enzymes are characterised by very specific activity, i.e. they catalyse definite biochemical reaction without disturbing any other reactions. The catalytic ability and specific activity of enzymes have, for a long time, been tried to be used for "pure and natural" processing and refinement of food products. But the enzymes can't be produced by chemical synthese. They can be produced only in living animals, plants and microorganisms. Enzymes can be separated from living organisms as living active enzymatic proteins. After their purification, concentration and stabilisation, quite a stable enzyme preparation is obtained. The name of the enzyme preparation determines the type of enzyme or enzymes occurring in it. Their concentration ratio in the preparation is expressed by the activity. The biggest amount and the most differentiated assortment of enzyme preparations in the world industry are produced from microorganisms. Those preparations have the most practical applications and their production costs are the lowest. "Pektowin" started the production of enzyme preparations in 1963. Our specialisation are preparations used in the food industry. Some assortments of the produced enzymes are used in other industry branches too. At present, the company doesn't produce enzymes. The devices and production lines are ready for production of enzyme preparations or for other biotechnological activity.
